Mouth Watering Monday: Crazy About Spinach Casserole Lucille

Spinach Casserole LucilleSpinach Casserole Lucille is baked with onions, Tony’s seasoning, jalapeno cheese, bread crumbs, spinach, and Worcestershire sauce for an extra Cajun kick!

Prep time: 25 minutes
Cooking time: 20 minutes
Serves: 8

Ingredients:

10 ounce Spinach (frozen)
4 tablespoon Margarine
2 tablespoon AllPurpose Flour
2 tablespoon Chopped Onions
1/2 cup Milk
4 tablespoon Tony Chacheres Original Creole Seasoning
10 slices Cheese (Jalapeno)
1 teaspoon Worcestershire Sauce
1/2 cup Bread Crumbs

Directions:

1: Cook spinach following directions on package.

2: Drain and reserve cup liquid.

3: Melt margarine in saucepan over low heat.

4: Add flour, stirring until blended and smooth, but not brown.

5: Add onions and cook until tender.

6: Pour in spinach liquid and milk slowly, stirring constantly to avoid lumps.

7: Cook until smooth and thick.

8: Add Tony Chachere’s Original Creole Seasoning, cheese, and Worcestershire; stir until melted.

9: Combine with cooked spinach.

10: Put into a square casserole; top with bread crumbs and place in 350 degrees oven until hot (about 20 minutes).

Mouth Watering Monday Recipe: Tony Chachere's Chicken Fried Rice

Recipe: Chicken Fried Rice

Summary: Chicken Fried Rice made with Tony Chachere’s Creole Roasted Chicken Rice Mix

Ingredients

  • 1/2 Whole Chopped Onions
  • 1/2 cup Chopped Bell Pepper
  • 2 tablespoon Oil
  • 1 pound Chicken Breast, Diced
  • 1/2 cup Frozen Peas and Carrots
  • 2 tablespoon Butter or Margarine
  • 2 tablespoon Soy Sauce
  • 7 ounce Tony Chachere’s Chicken Rice
  • 2 cup Water or Low Sodium Stock
  • 4 Whole Eggs, Beaten or Egg Substitute Equivalent

Instructions

  1. In a large skillet, brown onion and bell pepper in oil
  2. Add chicken
  3. Cook until chicken turns white
  4. Add peas and carrots, butter, soy sauce and rice
  5. Combine until all ingredients are well mixed
  6. Add liquid and bring to a boil
  7. Reduce heat. Cover

Number of servings (yield): 6
